Foraging Wild Asparagus in Maremma, a Simple Pasta Recipe
One of our favorite things about spring in Maremma is heading out into the countryside in search of wild asparagus. These slender green spears hide among the hedgerows and fields, waiting to be discovered. There’s something incredibly satisfying about foraging for your own food—being surrounded by nature, feeling the warmth of the sun, and knowing that in just a short time, you’ll be enjoying a dish made with ingredients you gathered yourself.
Wild asparagus has a delicate, slightly nutty, and earthy flavor, making it the perfect ingredient for a simple yet delicious pasta dish. With just a few high-quality ingredients, fresh pasta, garlic, Tenuta Le Mandorlaie organic extra virgin olive oil IGP, and pecorino cheese—you can create an authentic taste of Maremma right in your kitchen.
Ingredients: ✔ 250g fresh pasta (your pasta of choice) ✔ 1 bunch of wild asparagus, trimmed and cut into pieces ✔ Tenuta Le Mandorlaie organic extra virgin olive oil IGP ✔ 2 cloves garlic, minced ✔ 1 small red chili (optional, for a touch of heat) ✔ 50ml white wine (optional) ✔ Salt & black pepper to taste ✔ Grated Pecorino cheese for serving
Instructions
Bring a large pot of salted water to a boil and cook the pasta until al dente. Save some pasta water before draining.
Meanwhile, in a pan, heat the organic extra virgin olive oil over medium heat. Add the garlic and chili, sautéing until fragrant.
Toss in the wild asparagus and cook for a few minutes until tender. If using, add the white wine and let it reduce.
Add the drained pasta to the pan, along with a splash of pasta water, and toss everything together. Season with salt and black pepper.
