Description

We bring you our 2023 harvest IGP Extra Virgin Olive Oil Toscana.

  • Enjoy our blended organic extra virgin olive oil, the size is 5 litre.
  • Our olive trees varieties are Frantoio, Moraiolo, Leccino, and Pendolino.
  • Created from our 100+ year old trees on our organic farm in Maremma Tuscany. Situated near the sea, the environment and soils produce incredible olives, that go on to make our IGP Extra Virgin Olive Oil.
  • Collection, and getting olives to the olive pressing mill, this happens within six hours of us us picking our olive, the olives degrade once harvested so it is important to be fast to mill the olives.
  • The olive mill used is state of the art, the olives once washed enter the crushing machine and the environment is zero oxygen, meaning oxidization of the olives during the crushing process does not occur, this ensures the olive paste stays fresh when its arrives to the pressing machine, which is also oxygen free.
  • Our olive oil is ‘filtered’ extra virgin olive oil; it is filtered through ‘single use’ paper filter blocks under pressure after pressing, all particulates that could cause the oil to go ‘degrade over time’ are removed. Non filtered oil should be used within months, filtered extra virgin olive oil has a much longer life.
  • After going through the disposable, one ‘single use’ paper filtration system, our olive oil is stored in our own personal storage tanks in a temperature controlled environment and the tanks are topped off with nitrogen, this keeps the oil away from any contact with air during storage, it is only bottled when required.
  • We store our un-bottled olive oil in temperature controlled environment under nitrogen and even when bottling we place nitrogen in the bottle to remove any oil to air contact, thus reducing oxidisation, one of the main reasons that extra virgin olive oil looses its flavour and supreme taste profile.
  • The use of bag in box also ensures no contact with the air, due its design.

Understanding IGP Extra Virgin Olive Oil

IGP extra virgin olive oil represents the pinnacle of olive oil quality, blending the virtues of pure craftsmanship and the uniqueness of terroir. The IGP designation serves as a geographical seal, ensuring that the olives used in the oil’s production originate from a specific region, renowned for its distinctive environmental conditions, soil composition, and traditional cultivation methods.

The term “extra virgin” is a mark of purity, indicating that the oil is mechanically extracted from olives without the use of heat or chemicals. This meticulous process preserves the oil’s natural flavors, aromas, and nutritional benefits. With an acidity level below 0.8%, IGP extra virgin olive oil maintains the highest standards, delivering a taste experience that is both refined and authentic.
